Fresh Tips & Storage Instructions 7/05/2020

These will help your delicious ingredients last longer and go further – they’re too good to go bad.

BEETROOT

~ IN ALL BOXES~

Best-known locally in their vividly purple form, this versatile veg comes in a rich variety of colours: white, red, orange, and even stripey “rainbow” beetroots. Beetroot is super sweet, which makes it delicious in every form from summer salads to a roasted accompaniment to winter mains. Don’t peel a beetroot before cooking: to conserve nutrients and colour, do your steaming, roasting or boiling first, then allow the veg to cool before using your fingers or a knife to slice the skin right off.

FRESHLY BAKED BREADS

~ IN ALL BOXES~

Freeze one of your breads for now. When you’re ready to eat and enjoy, defrost your loaf, spray it with some water (so it doesn’t dry out), pop it in the oven at 180°C for 15 minutes, and voilà! You've successfully stopped time.

MILK

~ IN YOUR MEDIUM, LARGE & VEGETARIAN BOXES ~

Your fresh milk comes from the pristine Langvallei family farm in the mountains surrounding Roberston. Their cows enjoy fresh green pastures and they munch on good green grass, just as cows should. Your milk is preservative-free and should last up to a week in the fridge, but can also be frozen for up to 3 months.

OAT MILK

~ IN YOUR PLANT BASED & LARGE BOXES ~

Your dairy alternative this week is Oat Milk. Produced by SOMA, Oatify is fresh oat milk produced right here in the Mother City. Oat milk is a highly sustainable replacement for cow’s milk. Plus, it tastes absolutely delicious (use liberally). Please note that because Oatify is preservative-free, it requires refrigeration and should be consumed soon after opening – but we don’t reckon you’ll have any trouble with that.

FENNEL

~ IN ALL BOXES ~

Sweet, herby-tasting fennel: it’s been described as a meeting of liquorice and celery, but it’s our opinion that it has a flavour all of its own. Its exact notes will vary quite a bit depending on how you prepare it: serve fennel raw and sliced to showcase its natural sweetness and crunch, or try a roast, braise, or sauté technique to mellow its flavour and get its texture to a silky, comforting state.

PINK LADY APPLES

~ IN ALL BOXES~

The first of the season, and one of South Africa’s finest exports. We are proud to add them to our boxes, grown and harvested for you just over the hill in the epically beautiful Elgin valley. With a naturally sweet crunch, a special blush colour and a wonderful fizz, Pink Lady apples are everyone's favourite.

Because we believe that you should know the food you eat on a more personal level.

GOULASH

~ IN YOUR LARGE BOXES ~

This Hungarian dish calls for tender beef cubes with the flavours of onions and spice in the heartiest of stews. When you’re making goulash from this

Beef cubes”. That’s a bit of a cop out, when you see them at the supermarket. I mean…what cut is it even? You can take any beef and cut it into cubes to make “beef cubes”. And a lot of people do. We don’t. We use two specific cuts: topside and thick flank (sometimes called knuckle). Both of these cuts are found in the back leg of the animal which means they are pretty lean. That said, they lend themselves best to certain dishes. This is not stewing meat. You could thread them onto skewers, rub with coriander and cumin seeds and cook over a fire. You could toss them through a smoking hot wok/pan with a whole bunch of veg and spring onion and ginger. You could even use them to make a classic trinchado and mop up the sauce with bread. They’re super versatile.

EGGS

~ IN YOUR LARGE, MEDIUM & VEGETARIAN BOXES ~

Your eggs are laid by pasture-raised chickens that feed on non-GMO seeds. What that means is that these birds are free to roam with no fences locking them in. They have a warm protected coop to shelter in at night and lay eggs in during the day. By following the cows around the ranch, these chickens fulfil a niche role, while scratching and searching for grubs and seeds in the lush pastures of Spier Wine Estate.

WHOLE CHICKEN

~ IN YOUR MEDIUM & LARGE BOX ~

These chickens are pasture-reared and free to roam about as they please. They are not confined to coups, or only allowed a limited number of hours of sunlight – they get to live out natural, normal chicken days. Plus, you get a whole chicken – hello Sunday roast.
