Due to Heritage Day on the Thursday, all Market Boxes will be delivered on Wednesday 23rd September

Know Your Food 07/09/2020

Where it’s from, a bit about it, perhaps a fun fact and how to store or keep fresh

Brak Slaai

~ ALL BOXES ~

The novel fleshy green leaves in your box come from the local indigenous wild plant – brak slaai. This is a Market Box first, wild harvested on N'Rougas Farm in the Northern Cape. Rinse your brak slaai before using to remove any possible sandy bits. For Tips 'n Tricks on how to use your indigenous produce that we will be bringing to you during September, watch Making KOS’s (and indigenous plant food pro) Loubie Rusch every Wednesday on our Instagram feed (@ucook.market).

Cauliflower

ALL BOXES~

Part of the cruciferous vegetable family, your cauliflower can be eaten raw, steamed, boiled, roasted, baked, braaied or even crumbed to create a rice replacement. Store your cauli in your fridge’s crisper drawer – preferably in a loosely wrapped bag, or a container.

Leeks

~ ALL BOXES~

The leeks in your market box this week come from Naturally Organic. Methods of cleaning out your leeks will depend on whether you’ll be chopping or cooking them whole. Before getting started with either method, rinse your leeks under water. For chopped leeks – after rinsing, add chopped pieces into a colander and rinse under cold water. Transfer leeks from colander to a bowl of cold water and use your hands to agitate the leeks and dislodge any dirt. For whole leeks – fan open the leek and place under cold running water to rinse out.

Celeriac

~ LARGE, VEG, PLANT BASED BOXES~

The knobby veg in this week’s box is the celeriac – also called celery root is from Naturally Organic. Similar in flavour to celery (with nutty overtones), celeriac is ideal mashed or added to slow-cooked dishes. Yum!

Guavas

~  VEG, PLANT BASED, MEDIUM AND LARGE ~

Get a taste of the tropics with Magic Herbs’ guavas. Rich in antioxidants, vitamin C, potassium, and fibre – guavas help boost heart health, digestive health and immunity. Plus, they’re deliciously tasty

Ginger

~  ALL BOXES ~

Did you know that ginger is a flowering plant that originated from China, with a long history of use in various forms of traditional medicine? Enjoy by adding grated ginger to a cup of tea or to your baking for a sweet and spicy zest.

Vegan White Cheddar

~ PLANT BASED BOXES ~

Le Coquin is French for a ‘sneaky little child’, but as this sustainable supplier explains, their cheeses are free from dairy, egg, gluten, and soy – so there’s no need to sneak around when adding them to your meals. For optimum storage, simply remove any plastic wrapping and wrap it in wax paper, foil, or (first prize) a beeswax wrap that can be used again. Store in your fridge.

Gruberg

~ MEDIUM, LARGE, VEG BOXES ~

The Gruberg in your box is a Klein River flagship cheese and winner of multiple local and international awards. This artisanal, handmade, hand-brushed and hand-cut cheese undergoes a second scalding process – which gives it it’s nutty, earthy aromas and smooth-but-firm texture.

Dried Split Green Peas

~ VEG AND PLANT BASED BOXES ~

Your dried, split green peas come from The Real Food Factory, and are a great add to soups and stews – perfect for dinners when the springtime warmth has left the air. Did you know that split peas are simply garden peas which, when dried, lose their outer skin causing them to split in two – twins!

Milk

~ SMALL, MEDIUM, LARGE BOXES AND VEG ~

The Langvallei milk in your Market Box comes from grass-fed Jersey Cows. Although your milk is pastuerised, it is not homogenised – which means the cream will separate from the milk, so be sure to give it a good shake to keep the cream from separating (this extends the milk’s shelf life too).

Whole Chicken

~  SMALL, MEDIUM & LARGE BOXES ~

The chicken in your box this week comes from Son of a Butcher (SOB), whose produce is pasture-reared and free of hormones. Once removed from its packaging, discard any residue liquids – then, rinse your chicken and set it aside to air for 20 minutes. This process helps remove the cold edge, bringing it closer to room temperature, ensuring a smoother cooking process and tastier results.

Beef Mince

~ SMALL, MEDIUM & LARGE BOXES ~

We have Frankie Fenner Meat Merchants (FFMM) pasture-reared beef mince in your box this week – which has about 20% fat and 80% meat. If you won’t dig in within 2 days of receiving your box, store your mince in the freezer.

Swordfish

~ MEDIUM AND LARGE BOXES ~

Greenfish’s swordfish steaks are an easy-to-cook game fish that pairs well with most flavours. The white flesh can be seasoned with butter, salt and pepper – don’t forget the lemon juice when you pan-fry these babies to golden perfection within minutes.

Spinach Bread

~ MEDIUM, LARGE, VEG AND PLANT BASED ~

Your much loved gluten-free bread is back! Baked in the ovens of local spinach innovator, Spinach King, using spinach sourced from local microfarms, tapioca and rice flour – heat/toast before eating.

Coffee

~ ALL BOXES ~

The coffee sample in your Market Box this week comes from Arise Coffee – a creative collaboration between Tribe Coffee Roastery and Greenpop that sees every 3kg of Arise coffee sold result in a tree being planted. This is just one way in which your favourite Market Box makes contributing towards a greener world, simpler.

Red Pesto

~ ALL BOXES (VEGAN VERSION IN PLANT BASED BOXES) ~

We’re excited to have a food celeb in your box this week – it’s the signature red sun-dried tomato pesto from Karen Dudley of The Kitchen! Revisit the tastes of The Kitchen’s trademark love offering – The Love Sandwich made from artisanal breads, various fillings and the red pesto in your box.

Garden Salt

~ LARGE, VEG AND PLANT BASED ~

Situated in the Cape Floristic regions, Wild Harvest offers a range of food products made using wild indigenous plants that naturally grow in the region. The garden salt in your market box is enriched with the same aromas of this part of the Cape Floristic region – deliciously fragrant!
