Where it’s from, a bit about it, perhaps a fun fact and how to store or keep fresh

Wild Herb Pack

~ ALL BOXES ~

The wild rosemary, wild sage, and coastal rose geranium in your box are all natural to our beautiful Cape. Cultivated by small scale urban growers, these herbs contain wild aromatics and add a truly local fragrance to any desserts or main dish. Don’t miss Making KOS’s Loubie Rusch as she shares her Tips ‘n Tricks on using some of the ingredients in this weeks’ Heritage Month box offering (watch her video on our Instagram feed @ucook.market this Wednesday).

Waterblommetjies

ALL BOXES~

Also called Cape pondweed, or Cape asparagus – waterblommetjies are beautiful, fairly strange and enchanting water flowers that have a scaly formation. These aquatic plants are indigenous to the Western Cape, and are full of minerals and vitamins and can be made into a succulent traditional waterblommetjie bredie (stew). See lots of other ways to use them in our recipe suggestions online. 

Savoy Cabbage

~ ALL BOXES~

Savoy cabbage is part of the brassica family and is delicious when raw, in a salad and can also be eaten cooked (it pairs beautifully with fish). Savoy is not only delicious but highly nutritious – with vitamin C and potassium contents.

Broccoli 

~ ALL BOXES~

Broccoli is part of the cruciferous vegetable and can be eaten raw or cooked. Did you know that if you cut an “X” in the bottom of each fresh stalk of broccoli it will cook more evenly? This is because broccoli florets tend to cook quicker than the stalks – so X ‘em up.

Blueberries

~  ALL BOXES ~


Blueberries come in two varieties: cultivated and wild. Wild blueberries are much smaller than the cultivated ones that we commonly eat fresh. If you're using your berries in baked goods, dust them with flour just before you add them to a batter. This ensures they do not sink to the bottom of the pan. Store in a dry place or freeze.


Pears

~  ALL BOXES ~

In your boxes this week we have the delicious forelle pears from Terra Madre – a farm based in the beautiful Elgin Valley. Terra Madre is a family-owned business that grows and sources sustainable fruits and vegetables.

Young cheddar

~ SMALL, MEDIUM, LARGE & VEG BOXES ~

We have some mild, soft, young cheddar from Mystill for you to enjoy this week. All of Mysthill’s animals are raised as naturally and as freely as possible – their cheeses are handmade artisanally too. For optimum storage, simply remove any plastic wrapping and wrap it in wax paper, foil, or a beeswax wrap. Store in the fridge.

Cream 

~ MEDIUM, LARGE, VEG BOXES ~

The cream in your box hails from Mystill. Mystill’s artisanal products are produced using the milk of dairy cows who graze on lucerne and grass pastures, and are milked only once a day – so there’s no pressure for high production. The cows also drink water from the springs on the farm so there is no chlorine in their water.

Vegan Chevin

~ PLANT BASED BOXES ~

Find the traditional Chevin-style vegan cheese by Frauxmage in your box. Croissant Loaf

Find a whole pan loaf made with SCHOON's buttery croissant dough. Slice up to make delicious french toast, or toast and smear with butter and jam for a light snack. 


Granola 

~  MEDIUM, LARGE, VEG & PLANT BASED ~ 

The Seed & Circus granola in your box is made without the use of additives, is 100% gluten-free, and sweetened naturally with honey (the Plant Based box does not contain honey).

Lamb on the bone  

~ SMALL, MEDIUM & LARGE BOXES ~ 

Herdsmen’s lamb is a combination of neck, shank, leg and shoulder on the bone. This lamb cut is best browned in a pot until golden and sealed, then cooked low-and-slow in a sauce for ultimate tenderness and flavour development. 

Chicken breasts

~ SMALL, MEDIUM & LARGE BOXES ~ 

The chicken breasts in your box come from Son of a Butcher’s pasture-raised poultry. Once removed from its packaging, discard any residue liquids, then rinse your chicken and set it aside to air for 20 minutes. This process helps remove the cold edge, bringing it closer to room temperature and ensuring a smoother cooking process and tastier results. 

HAKE

~ MEDIUM & LARGE BOXES~

Your hake will be delivered to you defrosted, so it’s not a good idea to freeze them. Rather have within 2 days of receiving – prepare by rinsing your hake under the tap, pat dry with a tea towel and pan-fry in lemon and garlic butter until golden brown. 

Brown lentils 

~ VEG & PLANT BASED BOXES ~

Brown lentils are one of the most popular forms of protein around the world: they’re flavourful and keep well (dried) for up to a year. Soak your lentils overnight to help quicken their cooking time and reduce their antinutrient content.

Falafel 

~ VEG & PLANT BASE BOXES~

Find Yoffi Falafel in your box this week. Although they’re healthy, they are also incredibly moreish. Prepare them at home by frying them, and then gobble them up fresh out the pan.

Flour

~ ALL BOXES ~

The flour in your box comes from Gideon Milling. The mill is very selective when it comes to buying wheat and none of the wheat purchased is genetically modified. Crops on the mill are grown in an environmentally conscious way, using no-till sowing and crop rotation methods with various crop varieties being grown in a seasonal cycle.

Orange & Cardamom Jam
