Know Your Food 2/10/2020

Where it’s from, a bit about it, perhaps a fun fact and how to store or keep fresh.

Potatoes

~ ALL BOXES ~

What’s a Burgers & Shakes night without fries? Your tasty spuds come from Patrysvlei where Thomas Bergh grows exotic potatoes just outside of Clanwilliam. For the Bergh’s, farming is about ensuring the food on your table has been farmed in harmony with nature. Store your potatoes (unwashed), in the brown bag they came in, in a dark cupboard. When you want to cook, bake, fry or boil these earthy bulbs, wash them in cool water. Don’t be afraid to leave their skins on when using them – they are relatively soft and much of the nutritional value of a potato is found in its skin. If baked or fried, the skins add a rustic crunch when coated in olive oil.

Tomatoes

ALL BOXES ~

We’ve got tomatoes from Umthunzi! Tomatoes are a great source of Vitamin A, which is needed for cell growth and development, fighting off diseases and aiding good vision. Did you know there is a tomato called Beefsteak? It got this name because it doesn’t have a hard greenish-white core commonly found in most varieties – it’s solid red and entirely edible, just like a solid red meat steak.

Zucchini

~ ALL BOXES ~

Also known as courgette in many countries, we’ve sourced your zucchini from a local supplier – Umthunzi. With soft and edible seeds, zuccs are usually served cooked – steam, grill, stuff, bake, barbeque or fry these Vitamin C rich veggies.

Kohlrabi

~ ALL BOXES ~

The name kohlrabi is German for ‘cabbage-turnip’, and your Lenteguer kohlrabi sure looks like one! Rich in Vitamin C, half of a medium kohlrabi contains 90% of your RDI. Ensure to peel the outer green layer of your kohlrabi and eat only the soft white inside – it can be eaten raw with dip, added to salads or cooked. Said to taste like a mixture of cucumber and mild broccoli.

Blueberries

~ ALL BOXES ~

Blueberries come in two varieties: cultivated and wild. Wild blueberries are much smaller than the cultivated ones that we commonly eat fresh. If you're using your berries in baked goods, dust them with flour just before you add them to a batter. This ensures they do not sink to the bottom of the pan. Store in a dry place or freeze.

Avocados

~ ALL BOXES ~

Store your Avolands avocados at room temperature out of direct sunlight. Once ripe, eat right away or store in the fridge. If you’re looking to store half an avo, brush the exposed flesh with lemon juice, cover tightly with a Beeswax wrap, and refrigerate.

Truffle Aioli

~ ALL BOXES ~

You’ll find the crème de la crème of the Aioli range in your box: their Truffle Aioli! This luxurious product makes the perfect dip to crispy truffle fries – or dollop on a baked potato or your burger. It’s made from oil, egg, mustard, vinegar, truffle, garlic, salt and pepper. While the vegan version contains oil, aquafaba, mustard, vinegar, garlic, truffle, salt and pepper.

Coffee

~ ALL BOXES~

Arrow Coffee Roastery specialise in small batch coffee roasting and have provided the coffee in this week’s boxes. Great for affogato dessert or for that morning espresso to get you out of bed!

Spinach Loaf

~ MEDIUM & LARGE BOXES  ~

Your much loved gluten-free bread is back! Baked in the ovens of local spinach innovator, Spinach King, using spinach sourced from local microfarms, tapioca and rice flour. Owner, Lufefe, explains that he started Spinach King to promote the consumption of spinach by producing innovative spinach products to combat health challenges in his local community. Heat/toast your slices before eating.

Young Cheddar

~ SMALL, MEDIUM & LARGE BOXES ~

We have some mild, soft, young cheddar from Mystill for you to enjoy this week. All of Mysthill’s animals are raised as naturally and as freely as possible. Their cheeses are handmade artisanally, too. For optimum storage, simply remove any plastic wrapping and wrap it in wax paper, foil, or (first prize) a beeswax wrap that can be used again. Perfect for a classic cheese burger, store in the fridge.

Vegan Cheddar

~ SMALL, MEDIUM & LARGE BOXES ~

Le Coquin’s dairy free vegan cheddar is a firm, slightly elastic cheese with good grating, shredding, cutting and melting properties – perfect for a classic cheese burger. Keep refrigerated. After breaking the vacuum by opening it the product should be used within 5 days.

Beef Mince

~ SMALL, MEDIUM & LARGE BOXES ~

The team at Frankie Fenner Meat Merchants (FFMM) had this to say about their beef mince in some of this week’s boxes: “Mince doesn’t really get the credit it deserves. And we understand why. Too often, mince is simply bits and pieces from a day at the butchery. Chucked into a grinder. Not a lot of thought. Not a lot of love. At FFMM, we take as much pride in our ground, grass-fed beef, as we do with a ribeye. Our mince has about 20% fat and 80% meat and we keep it nice and coarse. We feel it lends itself to more cooking options this way.” This mince is perfect for you to make your own patties – just how you like them.

Vegan Prime Burger Patties

~ VEGETARIAN & PLANT BASED BOXES ~

Barbeque or pan-fry your vegan patties from Urban Vegan on a lightly oiled pan – 2-3 minutes a side, over low to medium heat. It tastes as good, if not better, than the alternative ;).

Tofu

~  VEGETARIAN & PLANT BASED BOXE ~

The 100% organic tofu from Tofu Tub in your box is extremely rich in protein, and is made from the curds of soybean milk – also known as “The Cheese of the Orient”. Your tofu comes in vacuum-sealed packaging, so if you’re not going to use it as soon as it arrives, we recommend that you store it in the fridge and consume within 3-5 days of opening.

Exotic mushrooms

~ VEGETARIAN & PLANT BASED BOXE ~

Your exotic mushrooms this week come from Funki Fungi. Grown locally using sustainable farming practices – you’re sure to love every bite. Did you know that there are over 38 000 varieties of mushrooms? These delicious and healthy meat alternatives should be stored in the fridge and keep for up to 7 days.

Whole Chicken

~ SMALL WHITE MEAT, MEDIUM & LARGE MIXED WHITE & MIXED MEAT BOXS ~

The chicken in your Market Box comes from Son of a Butcher (SOB). SOB produce is pasture-raised and free of hormones. Here are some handy pre-cooking tips to follow to ensure you get the most from your chicken. Once removed from its packaging, discard any residue liquids – then, rinse your chicken and set it aside to air for 20 minutes. This process helps remove the cold edge, bringing it closer to room temperature – ensuring a smoother cooking process and tastier results.

Lamb Boerie

~ MEDIUM & LARGE RED MEAT BOXES ~

Find Herdsmen’s beautifully spiced lamb boerie in this week’s Medium and Large Red Meat protein option. Perfect for every occasion, the rich aromas when placed on a braai will leave your mouth watering. Load up your rolls and plates, add tomato sauce with mustard, mayo or any sauce of your choice and munch away.

Duck Legs

~  MEDIUM & LARGE WHITE MEAT BOXS ~

The Caldhame duck portions are sourced from pekin ducks farmed using free range methods to provide fresh, tender meat of superior quality. Based in KZN, Caldhame Ducks is guided by the desire to be “the kindest duck farmers” – so their ducks are kept in natural conditions with freedom of movement to ensure they lead happy and healthy lives.

Tuna

~ SMALL, MEDIUM & LARGE MIXED MEAT BOXES ~

The catch in your Mixed Meat protein box option is Greenfish’s tuna. This tuna has been locally and sustainably caught using the pole method: one hook, one line, one fish at a time. Store your fresh tuna in your fridge and use at your leisure – it can last up to 5 days. Should you wish to freeze your tuna, freeze it as soon as you receive it and use it within 3 months.
