Dune Spinach & Stinging Nettle

~ ALL BOXES ~

While cultivated dune spinach is not completely new to your Market Box, this week we bring you some tried and tested ideas for making the most of these resilient coastal creeping wild foods. Take care to avoid the nettles in your box stinging you and watch Loubie Rusch of @makingKOS provide Tips ‘n Tricks for using these exciting ingredients this Wednesday on our Instagram feed (@ucook.market). 

Leeks

MEDIUM, LARGE, VEGETARIAN & PlANT BASE BOXES ~

The Naturally Organic leeks in your box can be cleaned in one of two ways. Before getting started with either method, rinse your leeks under water. For chopped leeks – after rinsing, add the chopped pieces into a colander and rinse under cold water. Transfer leeks from colander to a bowl of cold water and use your hands to agitate the leeks and dislodge any dirt. For whole leeks – fan open the leek and place under cold running water to rinse out. Grilled leeks are a great braai day add! 

Cauliflowers

~ MEDIUM, LARGE, VEGETARIAN & PlANT BASE BOXES ~

Naturally Organic’s cauliflowers can be eaten raw, steamed, boiled, roasted, baked, braaied or even crumbed to create a rice replacement. Store your cauli in your fridge’s crisper drawer – preferably in a loosely wrapped bag, or a container.

Exotic Mushrooms

~ LARGE, VEGETARIAN & PLANT BASE BOXES~

Exotic mushroom skewers anyone? Yes please! Thanks to Funky Fungi – you now have another delicious, and healthy meat-free alternative for your Braai Day skewers. Store in the fridge – they keep for up to 5-7 days.

Avos

~  ALL BOXES ~

The green fruit that makes an appearance in almost every savoury dish – it’s the nutritious avo! Store avos at room temperature out of direct sunlight. Once ripe, eat right away or store them in the fridge. If you cut your avo, brush the exposed flesh with lemon juice, cover tightly with a Beeswax wrap, and refrigerate.


Apples

The juicy apples in your box come from Terra Madre farm – a family-owned business that grows and sources sustainable fruits and vegetables. It’s the result of the Precoudis family’s commitment to sustainability and the community they serve. 

Strawberries 

~ ALL BOXES ~

Whether you’re hosting a braai or enjoying your own company, Mysthill Farm strawberries are great as light snacks. Your juicy, sweet strawberries were picked from fields against the Outeniqua Mountains in George. Store (unwashed) in the refrigerator for 3-5 days, they can also be frozen and keep for up to 2 months. 


Halloumi  

~ MEDIUM, LARGE, VEGETARIAN BOXES ~

Your halloumi hails from Camelot Organic Farm. It’s got a shelf life of 3-4 weeks, but tastes best when eaten within the first week. Because it’s brined in salty water, do a small taste test before cooking with it – this will let you determine if you’re happy with the level of saltiness. If it’s too salty, soak your cheese in clean cold water for 5-10 minutes, then pat dry with a paper towel and cook, fry or enjoy as is.

Vegan Cheddar

~ PLANT BASED BOXES ~

Le Coquin’s dairy free vegan chaddar is a firm, slightly elastic cheese with good grating, shredding, cutting and melting properties – ideal for braai brootdjies, pizzas, pastas and burgers. Keep refrigerated. After breaking the vacuum by opening it the product should be used within 5 days.

Hot Dog Rolls

The hot dog rolls in your box come from Knead Bakery – a Cape-based bakery passionate about making the best quality products. Your rolls were handmade – dough left to rise slowly, shaped and then baked in the oven in true artisanal style. 


Familiemeel 

~  ALL BOXES ~ 

Find Lowerland’s Familiemeel™ – also known as “mieliepap” or traditional maize meal in your box. The perfect add to go with delicious sheba (a rich tomato relish) and wors. Lamb Boerewors

~ SMALL, MEDIUM & LARGE BOXES ~ 

Find Herdsmen’s beautifully spiced lamb wors in your box. Perfect for every braai, the rich aromas will leave your mouth watering. Load up your hot dog rolls, add tomato sauce with mustard, mayo or any sauce of your choice. Lekker!

Chicken breasts

~ SMALL, MEDIUM & LARGE BOXES ~ 

The chicken breasts in your box come from Son of a Butcher’s pasture-raised poultry. Once removed from its packaging, discard any residue liquids, then rinse your chicken and set it aside to air for 20 minutes. This process helps remove the cold edge, bringing it closer to room temperature and ensuring a smoother cooking process and tastier results. 

Beef steak 

~ MEDIUM & LARGE BOXES~

Find a prime cut of beef steak – ribeye, rump or sirloin from Frankie Fenner Meat Merchants (FFMM). Season your steak before cooking and let it sit at room temperature for an hour. Heat some oil in a cast iron skillet over medium-high heat. Panfry your steak, turning every 2 minutes, until a deep brown crust forms. Rest your steak for 2-3 minutes before slicing. 

White kidney beans  

~ VEG & PLANT BASED BOXES ~

You’ve got superfood white kidney beans – from Real Food Factory – in your box! Add this legume to your diet for a fibre and protein boost. They’re also a great source of iron – making them a great alternative to animal protein. 

Tofu 

~ VEG & PLANT BASE BOXES~

The 100% organic tofu from Tofu Tub in your box is extremely rich in protein, and is made from the curds of soybean milk – also known as “The Cheese of the Orient”. Your tofu comes in vacuum-sealed packaging, so if you’re not going to use it as soon as it arrives, we recommend that you store it in the fridge and consume within 3-5 days of opening. 

Old Fashioned Sosatie Marinade

~ ALL BOXES ~

The marinade in your box is from The Cooksisters and is handmade from spirit vinegar, sugar, onion, garlic, spices, herbs, and apricot chutney. For ultimate flavour, marinade your braai meat overnight or use as a basting before braaing. This marinade is great over grilled vegetables too. Store in the fridge once opened.

Inspired by the small vegetable garden at the Sustainability Institute, this range embraces the vegetable offcuts, edible weeds that are so readily denigrated, and several indigenous leafy greens to add delicious flavour to any dish.
